Ingredients
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large ovenproof pot, heat the olive oil over medium heat. Add the lamb shoulder and brown it on all sides. Remove the lamb from the pot and set it aside.
-
In the same pot, add the onions and garlic. Sauté until the onions are translucent.
-
Add the carrots, celery, canned tomatoes, tomato paste, chicken stock, Ras el Hanout spice blend, cinnamon stick, salt, and black pepper. Stir well.
-
Return the lamb shoulder to the pot and bring the mixture to a simmer. Cover the pot and transfer it to the preheated oven. Cook for 2 hours or until the lamb is tender.
-
While the lamb is cooking, peel and chop the potatoes. Place them in a large pot of salted water and bring to a boil. Cook until the potatoes are tender.
-
Drain the potatoes and return them to the pot. Add butter, milk, and egg yolks. Mash until smooth and creamy.
-
Once the lamb is cooked, remove it from the oven and shred the meat using two forks. Discard the cinnamon stick.
-
Transfer the shredded lamb and the cooking liquid to a baking dish. Spread the mashed potatoes over the lamb mixture.
-
Place the baking dish in the oven and bake for 25-30 minutes, or until the potatoes are golden brown.
-
Remove from the oven and let it rest for 10 minutes before serving.
-
Serve hot and enjoy!
