Ingredients
  • 800 gram Lamb shanks
  • 50 gram Plain flour
  • 50 gram Butter
  • 150 gram Onion
  • 150 gram Carrot
  • 100 gram Celery
  • 3 piece Garlic cloves
  • 2 tablespoon Tomato paste
  • 250 milliliter Red wine
  • 500 milliliter Beef stock
  • 2 sprig Fresh thyme
  • 2 piece Bay leaves
  • 250 gram Puff pastry
  • 1 piece Egg
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 160°C (320°F).
  2. Season the lamb shanks with salt and black pepper.
  3. In a large ovenproof pot, heat some oil over medium-high heat and brown the lamb shanks on all sides. Remove from the pot and set aside.
  4. In the same pot, melt the butter and add the onion, carrot, celery, and garlic. Cook until softened.
  5. Add the tomato paste and cook for another minute.
  6. Deglaze the pot with red wine, scraping the bottom to release any browned bits.
  7. Add the beef stock, thyme, and bay leaves. Return the lamb shanks to the pot.
  8. Cover the pot and transfer to the preheated oven. Cook for 5 to 3 hours, or until the lamb is tender and falling off the bone.
  9. Remove the lamb shanks from the pot and shred the meat, discarding any bones and excess fat. Set aside.
  10. Strain the cooking liquid and discard the solids. Return the liquid to the pot and simmer until reduced and thickened.
  11. Add the shredded lamb back to the pot and stir to combine.
  12. Increase the oven temperature to 180°C (350°F).
  13. Roll out the puff pastry on a lightly floured surface and cut into a shape that fits your pie dish.
  14. Fill the pie dish with the lamb mixture and cover with the puff pastry.
  15. Beat the egg and brush it over the pastry.
  16. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown.
  17. Allow the pie to rest for 10-15 minutes before serving.
  18. Serve the lamb shank pie hot and enjoy!
