Ingredients
  • 1.5 cup Graham cracker crumbs
  • 0.5 cup Unsalted butter, melted
  • 1 can Sweetened condensed milk
  • 4 large Egg yolks
  • 0.5 cup Key lime juice
  • 0.25 cup Passion fruit puree
  • 0.5 cup Granulated sugar
  • 1 tablespoon Cornstarch
  • 1 cup Huckleberries
  • 0.25 cup Water
  • 1 teaspoon Lime zest
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch pie dish to form the crust.
  3. In a separate bowl, whisk together the sweetened condensed milk, egg yolks, and key lime juice until well combined. Pour the mixture into the prepared crust.
  4. Bake for 15 minutes, or until the filling is set. Remove from the oven and let cool to room temperature.
  5. In a small saucepan, combine the passion fruit puree, granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
  6. In another saucepan, combine the huckleberries, water, and lime zest. Cook over low heat, stirring occasionally, until the huckleberries soften and release their juices. Remove from heat and let cool.
  7. To serve, drizzle the passion fruit coulis over the pie and spoon the huckleberry compote on top. Enjoy!
