Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1.5 cup Granulated sugar
  • 3 Eggs
  • 1/4 cup Key lime juice
  • 1 tablespoon Key lime zest
  • 1 teaspoon Vanilla extract
  • 2 tablespoon White rum
  • 1/4 cup Milk
  • 1 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the key lime juice, key lime zest, vanilla extract, and rum.
  5. Gradually mix in the dry ingredients alternately with the milk, beginning and ending with the dry ingredients.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, dust the top with powdered sugar before serving.
