  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add the sweetened condensed milk, key lime juice, and lime zest. Mix until well combined.
  4. Pour the mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.
  7. In a separate mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. Spread the whipped cream over the cooled cake.
