Key lime pie is the official state pie of Florida, but this key lime cake is a delicious twist on the classic dessert.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, whisk together the cake flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the lime zest and lime juice. Beat in the flour mixture alternately with the buttermilk, mixing just until incorporated. Stir in the vanilla extract.

Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.
