  1. Preheat the oven to 375°F (190°C). Roll out the pie crust and line a 9-inch pie dish.
  2. In a bowl, combine the sliced rhubarb, granulated sugar, cornstarch, cinnamon, and lemon juice. Mix well.
  3. Pour the rhubarb mixture into the prepared pie crust.
  4. Roll out the remaining pie crust and cut it into strips. Create a lattice pattern on top of the pie.
  5. In a small bowl, beat the egg with water. Brush the egg wash over the lattice crust.
  6. Bake the pie for 40-45 minutes, or until the crust is golden and the filling is bubbly.
  7. Remove from the oven and let it cool for at least 1 hour.
  8. Dust with powdered sugar before serving.
