  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add diced onion and minced garlic, and cook until onion is translucent.
  3. Add diced chicken to the skillet and cook until browned.
  4. Stir in flour and cook for 1 minute.
  5. Slowly add chicken broth and milk, stirring constantly until the mixture thickens.
  6. Add diced carrots and peas. Season with salt and pepper.
  7. Remove from heat and let the mixture cool slightly.
  8. Roll out the puff pastry sheets and cut into circles to fit the top of the individual ramekins.
  9. Fill each ramekin with the chicken mixture and top with the puff pastry circles.
  10. Beat the egg and brush the top of each pot pie with the beaten egg.
  11. Bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden brown.
  12. Let the pot pies rest for 10 minutes before serving.
