Ingredients
  • 500 gram Jicama
  • 200 gram Pie crust
  • 1 cup Coconut milk
  • 3 tablespoon Maple syrup
  • 2 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon powder
  • 0.5 teaspoon Salt
  • 2 tablespoon Coconut flakes
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Peel and grate the jicama.
  3. In a bowl, combine the grated jicama, coconut milk, maple syrup, cornstarch, vanilla extract, cinnamon powder, and salt.
  4. Mix well until all ingredients are combined.
  5. Roll out the pie crust and place it in a pie dish.
  6. Pour the jicama mixture into the pie crust.
  7. Sprinkle coconut flakes on top.
  8. Bake in the preheated oven for 40 minutes or until the pie is set.
  9. Remove from the oven and let it rest for 30 minutes.
  10. Serve the jicama pie chilled or at room temperature.
