Ingredients
  • 2 cup All-purpose flour
  • 1 cup Granulated sugar
  • 2 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 2 large Eggs
  • 0.75 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 cup Jelly (assorted flavors)
  • 0.5 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the eggs, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup halfway. Add a spoonful of jelly to each cup, then top with more batter to cover the jelly.
  6. Bake for 15-18 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  7. Allow the cakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  8. Dust with powdered sugar before serving.
