Ingredients
  • 250 gram Pie crust
  • 200 gram Zucchini
  • 150 gram Bell peppers
  • 150 gram Cherry tomatoes
  • 100 gram Onion
  • 2 clove Garlic
  • 4 unit Eggs
  • 1 cup Milk
  • 100 gram Parmesan cheese
  • 20 gram Basil leaves
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Roll out the pie crust and line a pie dish with it.
  3. In a pan, heat olive oil and sauté the onion and garlic until translucent.
  4. Add the zucchini, bell peppers, and cherry tomatoes. Cook for 5 minutes.
  5. In a bowl, whisk together the eggs, milk, Parmesan cheese, basil leaves, salt, and black pepper.
  6. Pour the vegetable mixture into the pie crust.
  7. Pour the egg mixture over the vegetables.
  8. Bake in the preheated oven for 40-45 minutes or until the pie is set and golden.
  9. Let it rest for 10 minutes before serving.
  10. Slice and serve the Italian Vegetable Pie.
