Shepherd’s Pie is traditionally made with lamb, but this Italian version uses ground beef instead.

Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned. Remove the beef from the skillet and set aside.

In the same skillet, add the onion, carrots, celery, and garlic. Cook until the vegetables are tender.

Return the beef to the skillet and stir in the tomato paste, red wine, beef broth, rosemary, thyme, salt, and black pepper. Simmer for 10 minutes.

In a separate bowl, mix the mashed potatoes, Parmesan cheese, butter, and egg yolk.

Transfer the beef mixture to a baking dish and spread the mashed potato mixture on top.

Bake for 30 minutes, or until the top is golden brown.

Let the Shepherd's Pie rest for 10 minutes before serving.
