Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the ground beef to the skillet and cook until browned. Drain any excess fat.

Stir in the tomato paste, dried oregano, dried basil, salt, and black pepper. Cook for 2 minutes.

Add the frozen mixed vegetables and chicken broth to the skillet. Bring to a simmer and cook for 5 minutes.

Divide the beef mixture evenly among 4 individual oven-safe dishes.

Cut the puff pastry sheets into circles that are slightly larger than the dishes. Place a puff pastry circle on top of each dish, pressing the edges to seal.

Brush the tops of the puff pastry with beaten egg.

Bake in the preheated oven for 20-25 minutes, or until the puff pastry is golden brown and cooked through.

Allow the pot pies to rest for 10 minutes before serving.
