Ingredients
  • 200 gram Butter
  • 200 gram Brown Sugar
  • 4 unit Eggs
  • 200 gram All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 400 gram Mixed Dried Fruits (e.g. raisins, currants, chopped dates)
  • 1 teaspoon Ground Cinnamon
  • 250 ml Guinness Beer
  • 1 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 180°C (350°F) and grease a cake tin.
  2. In a mixing bowl, cream together the butter and brown sugar.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, sift together the flour and baking powder.
  5. Gradually add the dry ingredients to the creamed butter mixture, mixing well.
  6. Stir in the mixed dried fruits, ground cinnamon, Guinness beer, and vanilla extract.
  7. Pour the batter into the greased cake tin and smooth the top.
  8. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let the cake cool in the tin for 10 minutes.
  10. Transfer the cake to a wire rack and let it cool completely.
  11. Serve and enjoy!
