Ingredients
  • 500 gram Chicken breast
  • 2 piece Leeks
  • 2 piece Carrots
  • 2 tablespoon Butter
  • 2 tablespoon Flour
  • 1 cup Chicken stock
  • 1 cup Milk
  • 1 cup Frozen peas
  • 1 sheet Puff pastry
  • 1 piece Egg
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
Instructions
  1. Preheat the oven to 180°C.
  2. In a large pan, melt the butter over medium heat.
  3. Add the chicken breast and cook until browned on all sides. Remove from the pan and set aside.
  4. In the same pan, add the leeks and carrots. Cook until softened.
  5. Add the flour and stir well to coat the vegetables.
  6. Gradually add the chicken stock and milk, stirring constantly until the mixture thickens.
  7. Add the cooked chicken and frozen peas. Season with salt and pepper.
  8. Transfer the mixture to a pie dish.
  9. Roll out the puff pastry and place it over the pie dish, trimming any excess pastry.
  10. Beat the egg and brush it over the pastry.
  11. Bake in the preheated oven for 30-40 minutes, or until the pastry is golden and crisp.
  12. Allow the pie to rest for 10 minutes before serving.
