  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust dough and cut it into circles to fit the individual pie pans.
  3. In a bowl, combine the chopped rhubarb, sugar, flour, and lemon juice. Mix well.
  4. Place the rhubarb mixture into the prepared pie crusts.
  5. Cover each pie with another circle of pie crust dough and crimp the edges to seal.
  6. Brush the top of each pie with beaten egg.
  7. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  8. Remove from the oven and let the pies cool for 10 minutes before serving.
