Peel, core, and chop the apples into small pieces.

In a bowl, mix the chopped apples, sugar, cinnamon, lemon juice, and cornstarch until well combined.

Roll out the puff pastry sheet and cut it into 4 equal squares.

Place a spoonful of the apple mixture in the center of each square.

Fold the corners of the pastry squares over the filling, forming a triangle shape.

Brush the tops of the pies with beaten egg.
