  • 2 teaspoon Ginger
  • 4 tablespoon Butter
  • 1 cup Brown sugar
  • 1 large Egg
  • 2 tablespoon Molasses
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Milk
  • 0.5 cup Apricot jam
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour four individual cake pans.
  2. In a mixing bowl, cream together the butter and brown sugar until light and fluffy. Add the egg and molasses, and mix well.
  3. In a separate bowl, whisk together the flour, baking powder, ginger, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk.
  4. Divide the batter evenly among the prepared cake pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  5. While the cakes are baking, prepare the apricot sticky sauce. In a small saucepan, heat the apricot jam and lemon juice over low heat until melted and well combined.
  6. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  7. Serve the individual ginger cakes with the warm apricot sticky sauce drizzled over the top.
