  2. In a large skillet, cook the chicken breast until no longer pink. Remove from skillet and shred.
  3. In the same skillet, melt butter and sauté onions until translucent. Add carrots and peas, cook until tender.
  4. Stir in flour and cook for 1 minute. Gradually add chicken stock and milk, stirring constantly until thickened.
  5. Add shredded chicken, salt, and black pepper. Mix well.
  6. Divide the chicken mixture into individual oven-safe dishes.
  7. Roll out the puff pastry and cut into circles slightly larger than the dishes. Place the pastry over the chicken mixture, pressing the edges to seal.
  8. Beat the egg and brush the pastry with it.
  9. Bake for 25-30 minutes or until the pastry is golden brown.
  10. Let it rest for 10 minutes before serving.
