Individual Beef Pot Pies

Pot pies originated in Greece and were traditionally made with a meat filling and a pastry crust.

Preheat the oven to 375°F (190°C).

In a large bowl, combine the flour, salt, and black pepper. Add the beef stew meat and toss until well coated.

Heat olive oil in a large skillet over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the skillet and set aside.

In the same skillet, add the onion, carrots, celery, and garlic. Cook until the vegetables are softened.

Return the beef stew meat to the skillet. Add the beef broth and Worcestershire sauce. Bring to a simmer and cook for 15 minutes.

Stir in the frozen peas and cook for an additional 5 minutes.

Divide the beef mixture among 4 individual oven-safe dishes.

Cut the puff pastry sheets into circles slightly larger than the dishes. Place a puff pastry circle on top of each dish, pressing the edges to seal.

Brush the puff pastry with beaten egg.

Bake for 20-25 minutes, or until the puff pastry is golden brown and the filling is bubbling.

Allow the pot pies to rest for 10 minutes before serving.
