Hungarian Coffee Cake, also known as ‘Rigó Jancsi’, is a traditional Hungarian dessert named after a famous Hungarian violinist.

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the sour cream and vanilla extract.

In a separate bowl, combine the flour, instant coffee granules, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just blended.

Pour the batter into the prepared cake pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Once cooled, dust the top of the cake with powdered sugar. Serve and enjoy!
