Ingredients
Instructions
-
Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
-
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
-
In a separate bowl, mix together the mashed bananas, crushed pineapple, vegetable oil, vanilla extract, granulated sugar, and applesauce.
-
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the chopped pecans.
-
Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
-
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
-
In a mixing bowl, beat together the vegan cream cheese, vegan butter, and powdered sugar until smooth and creamy.
-
Once the cakes are completely cooled, spread a layer of cream cheese frosting on top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining cream cheese frosting.
-
Allow the cake to rest for at least 1 hour before serving to allow the flavors to meld together.
-
Slice and enjoy!
