Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch round cake pans.

In a large bowl, whisk together the flour, baking soda, salt, and granulated sugar. Add the oil, eggs, vanilla extract, crushed pineapple with juice, chopped pecans, and mashed bananas. Mix until well combined.

Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.

In a separate bowl, beat the cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, beating until creamy.

Place one cake layer on a serving plate and spread a layer of the cream cheese frosting on top. Repeat with the remaining cake layers and frosting. Sprinkle the chopped pecans on top.

Refrigerate the cake for at least 1 hour before serving. Enjoy!
