Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

In a large bowl, combine the flour, sugar, baking soda, cinnamon, and salt. Stir in the oil, eggs, vanilla extract, pineapple, bananas, and pecans until well combined.

Divide the batter evenly among the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

In a mixing bowl, beat the cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla extract, beating until smooth.

Place one cake layer on a serving plate and spread with a layer of cream cheese frosting. Repeat with the remaining cake layers and frosting. Decorate as desired.

Allow the cake to rest for at least 1 hour before serving to allow the flavors to meld together.
