Hummingbird Cake

The Hummingbird Cake is a traditional Southern dessert that first appeared in a 1978 issue of Southern Living magazine. It is named after the sweet nectar that hummingbirds feed on, due to its rich and sweet flavors.
This is vegetarian recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, whisk together the flour, sugar, baking soda, salt, and cinnamon.

Add the oil, eggs, vanilla extract, pineapple, bananas, and pecans to the bowl. Stir until well combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.

In a separate bowl, beat together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Place one cake layer on a serving plate and spread a layer of cream cheese frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
