  1. Preheat the oven to 220°C (425°F).
  2. In a large bowl, mix together the wholemeal flour, all-purpose flour, baking powder, and salt.
  3. Add the cold butter to the dry ingredients and use your fingertips to rub it in until the mixture resembles breadcrumbs.
  4. In a separate bowl, whisk together the honey, milk, and egg.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined.
  6. Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
  7. Pat the dough into a 2cm (3/4 inch) thick round and cut out scones using a round cutter.
  8. Place the scones onto a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes or until golden brown.
  10. Remove from the oven and let the scones cool on a wire rack for 10 minutes before serving.
