Ingredients
  • 1.5 cup Cornmeal
  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/4 cup Honey
  • 1 cup Milk
  • 1 large Egg
  • 4 tablespoon Butter
Instructions
  1. Preheat the oven to 400°F (200°C). Grease a muffin tin.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, and salt.
  3. In a separate bowl, mix together the honey, milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
  8. Serve warm or at room temperature.
