Preheat the oven to 180°C (350°F).

Roll out the shortcrust pastry and line a greased pie dish.

Peel and boil the potatoes until tender. Drain and mash.

In a pan, melt the butter and sauté the chopped onion and minced garlic until soft.

Add the mashed potatoes, grated Cheddar cheese, double cream, chopped parsley, salt, and black pepper to the pan. Mix well.

Pour the potato mixture into the pie dish and smooth the top.

Bake in the preheated oven for 40 minutes or until golden brown.
