Ingredients
  • 1 cup Pumpkin puree
  • 3 large Eggs
  • 1/2 cup Greek yogurt
  • 1 teaspoon Vanilla extract
  • 1/4 cup Honey
  • 1/4 cup Coconut oil
  • 1 cup Whole wheat flour
  • 2 scoop Protein powder
  • 1 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/2 teaspoon Ginger
  • 1/4 teaspoon Salt
  • 1/2 cup Chopped walnuts
  • 1/4 cup Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a large bowl, whisk together the pumpkin puree, eggs, Greek yogurt, vanilla extract, honey, and coconut oil.
  3. In a separate bowl, mix together the whole wheat flour, protein powder, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes.
  9. Transfer the cake to a wire rack to cool completely.
  10. Once cooled, dust with powdered sugar before serving.
