Preheat the oven to 350°F (175°C) and grease a cake pan.

In a large bowl, combine the carrots, flour, sugar, vegetable oil, eggs, crushed pineapple, shredded coconut, chopped walnuts, baking powder, baking soda, cinnamon, salt, and Hellmann's Real Mayonnaise. Mix well.

Pour the batter into the greased cake pan.

Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes.

Transfer the cake to a wire rack and let it cool completely.
