  1. Preheat the oven to 180°C (350°F).
  2. Peel and grate the carrots.
  3. In a large bowl, combine the grated carrots, all-purpose flour, brown sugar, vegetable oil, eggs, baking powder, cinnamon, and salt. Mix well.
  4. Fold in the chopped walnuts.
  5. Pour the batter into a greased cake pan.
  6. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  8. Transfer the cake to a wire rack and let it cool completely.
  9. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Spread the cream cheese frosting over the cooled cake.
  11. Serve and enjoy!
