Ingredients
  • 1.5 cup Rice flour
  • 2 teaspoon Matcha powder
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cup Coconut oil
  • 0.5 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 cup Soy milk
Instructions
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the rice flour, matcha powder, baking powder, and salt.
  3. In a separate bowl, whisk together the coconut oil, maple syrup, vanilla extract, and soy milk.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cake cool in the pan for 10 minutes.
  8. Transfer the cake to a wire rack and let it cool completely.
  9. Once cooled, slice and serve.
