  • 1 cup Pumpkin Puree
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 1/4 cup Honey
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cup Bran Flakes
  • 1 cup Whole Wheat Flour
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 1/2 cup Chopped Pecans
  • 1/2 cup Dried Cranberries
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a large bowl, mix together the pumpkin puree, eggs, vegetable oil, honey, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the bran flakes, whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped pecans and dried cranberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
