Carrots were first used in sweet cakes during the medieval period when sugar and sweeteners were scarce and expensive.
This is vegetarian and gluten free recipe. Dish can be prepared in 85 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 180°C (350°F). Grate the carrots.

In a large mixing bowl, combine the whole wheat flour, almond flour, baking powder, ground cinnamon, and ground nutmeg.

In another bowl, whisk the eggs, honey, coconut oil, and vanilla extract. Add the grated carrots and mix well.

Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

Fold in the Greek yogurt and chopped walnuts.

Pour the batter into a greased cake pan and bake for 35 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Once cooled, you can frost the cake with cream cheese frosting or enjoy it as is.
