  1. Preheat the oven to 180°C (350°F).
  2. Grate the carrots and set aside.
  3. In a large bowl, whisk together the whole wheat flour, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat the eggs, honey, vegetable oil, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots and chopped walnuts.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. In a small bowl, beat the cream cheese, powdered sugar, and lemon juice until smooth.
  11. Spread the cream cheese frosting over the cooled cake.
  12. Slice and serve.
