  • 2 cup Pie crust
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 2 medium Potatoes
  • 1 cup Frozen peas
  • 2 cup Vegetable broth
  • 2 tablespoon All-purpose flour
  • 1 cup Milk
  • 1 teaspoon Thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Rosemary
  • 1 teaspoon Sage
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until fragrant.
  3. Add carrots, celery, and potatoes. Cook until vegetables are tender.
  4. Stir in frozen peas and vegetable broth.
  5. In a separate bowl, whisk together flour and milk until smooth. Pour into the skillet and stir well.
  6. Add thyme, salt, black pepper, rosemary, and sage. Cook until the mixture thickens.
  7. Divide the filling into individual oven-safe dishes.
  8. Roll out the pie crust and cover each dish with the crust.
  9. Cut slits on the crust for ventilation.
  10. Bake for 25-30 minutes or until the crust is golden brown.
  11. Let it rest for 10 minutes before serving.
