  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened.
  3. Stir in the flour and cook for 1 minute.
  4. Gradually whisk in the milk and chicken broth. Bring to a boil and cook until thickened.
  5. Stir in the Dijon mustard, salt, pepper, ham, cheese, and peas.
  6. Roll out the pie crust and place it in a pie dish.
  7. Pour the filling into the pie crust.
  8. Top with another pie crust and seal the edges.
  9. Cut slits in the top crust to allow steam to escape.
  10. Bake for 30-40 minutes, or until the crust is golden brown.
  11. Let the pot pie rest for 10 minutes before serving.
