  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, melt butter over medium heat. Add diced onion, carrots, celery, and minced garlic. Cook until vegetables are softened, about 5 minutes.
  3. Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and milk. Bring to a simmer and cook until thickened, about 5 minutes.
  4. Add diced ham, cannellini beans, and thyme to the skillet. Stir well to combine.
  5. Divide the mixture evenly among 4 individual oven-safe bowls or ramekins.
  6. Roll out the puff pastry sheet and cut into 4 circles slightly larger than the bowls or ramekins. Place a puff pastry circle on top of each bowl, pressing the edges to seal.
  7. Beat the egg in a small bowl and brush the tops of the puff pastry with the beaten egg.
  8. Place the bowls or ramekins on a baking sheet and bake for 20-25 minutes, or until the puff pastry is golden brown and the filling is bubbling.
  9. Remove from the oven and let rest for 10 minutes before serving.
