Ingredients
  • 500 gram Beetroot
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Olive oil
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 large Eggs
  • 1 cup Heavy cream
  • 1 sheet Pie crust
Instructions
  1. Preheat the oven to 180°C (350°F).
  2. Peel and grate the beetroot.
  3. Finely chop the onion and garlic.
  4. Heat olive oil in a pan and sauté the onion and garlic until golden brown.
  5. Add the grated beetroot, thyme, salt, and black pepper. Cook for 5 minutes.
  6. In a separate bowl, whisk together the eggs and heavy cream.
  7. Add the beetroot mixture to the egg mixture and stir well.
  8. Roll out the pie crust and line a pie dish with it.
  9. Pour the beetroot mixture into the pie crust.
  10. Bake in the preheated oven for 40-45 minutes, or until the pie is set.
  11. Remove from the oven and let it rest for 10 minutes before serving.
