Preheat the oven to 180°C (350°F).

In a large oven-safe pot, heat some oil over medium heat and brown the beef.

Remove the beef from the pot and set it aside.

In the same pot, add the onion, carrot, and potato. Cook until softened.

Add the flour and butter to the pot and cook for a few minutes.

Slowly add the Guinness stout, beef stock, and Worcestershire sauce. Stir well.

Return the beef to the pot and add the fresh thyme.

Cover the pot and transfer it to the preheated oven. Cook for 2 hours.

Remove the pot from the oven and let it rest for 10 minutes.

Increase the oven temperature to 200°C (400°F).

Roll out the puff pastry and place it over the pot, sealing the edges.

Brush the pastry with beaten egg.

Return the pot to the oven and bake for 20-25 minutes, or until the pastry is golden brown.
