Ingredients
Instructions
-
Preheat the oven to 180°C (350°F).
-
In a large pot, heat the olive oil over medium heat. Add the beef stew meat and cook until browned on all sides.
-
Remove the beef from the pot and set aside. In the same pot, add the onion, carrots, and potatoes. Cook until the vegetables are slightly softened.
-
Sprinkle the flour over the vegetables and stir to coat. Cook for another minute.
-
Pour in the Guinness beer, beef stock, and Worcestershire sauce. Add the thyme, salt, and pepper. Stir well.
-
Return the beef to the pot and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 5 to 2 hours, or until the beef is tender.
-
Transfer the stew to a pie dish.
-
Roll out the puff pastry sheet and place it over the pie dish, trimming any excess pastry. Brush the pastry with beaten egg.
-
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
-
Allow the pie to rest for 10 minutes before serving.
