  1. Preheat the oven to 180°C (350°F).
  2. In a large pot, heat the olive oil over medium heat. Add the beef stew meat and cook until browned on all sides.
  3. Remove the beef from the pot and set aside. In the same pot, add the onion, carrots, and potatoes. Cook until the vegetables are slightly softened.
  4. Sprinkle the flour over the vegetables and stir to coat. Cook for another minute.
  5. Pour in the Guinness beer, beef stock, and Worcestershire sauce. Add the thyme, salt, and pepper. Stir well.
  6. Return the beef to the pot and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 5 to 2 hours, or until the beef is tender.
  7. Transfer the stew to a pie dish.
  8. Roll out the puff pastry sheet and place it over the pie dish, trimming any excess pastry. Brush the pastry with beaten egg.
  9. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.
  10. Allow the pie to rest for 10 minutes before serving.
