  1. Preheat the oven to 180°C (350°F). Peel and grate the potatoes, then squeeze out any excess moisture.
  2. In a bowl, mix the grated potatoes with salt and black pepper. Press the mixture into the bottom and sides of a greased pie dish to form the crust.
  3. Bake the potato crust in the preheated oven for 20 minutes, or until golden brown.
  4. While the crust is baking, heat olive oil in a pan over medium heat. Add minced garlic and diced onion, and sauté until softened.
  5. Add spinach to the pan and cook until wilted. Remove from heat.
  6. In a separate bowl, whisk together eggs and milk. Season with salt and black pepper.
  7. Spread the cooked spinach mixture over the potato crust. Crumble goat cheese on top.
  8. Pour the egg mixture over the spinach and cheese.
  9. Return the pie to the oven and bake for another 20 minutes, or until the eggs are set.
