Ingredients
  • 16 ounce Chicken Breast
  • 1 cup Green Chiles
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Butter
  • 1/4 cup All-Purpose Flour
  • 1 cup Chicken Broth
  • 1/2 cup Heavy Cream
  • 1 cup Frozen Mixed Vegetables
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 sheet Puff Pastry
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the chicken breast until no longer pink. Remove from skillet and shred.
  3. In the same skillet, melt butter and sauté onion and garlic until translucent.
  4. Add flour and cook for 1 minute, stirring constantly.
  5. Slowly whisk in chicken broth and bring to a simmer.
  6. Add heavy cream, green chiles, mixed vegetables, salt, and black pepper. Stir until well combined.
  7. Add shredded chicken to the skillet and mix well.
  8. Transfer the mixture to a baking dish.
  9. Roll out the puff pastry and place it over the baking dish, covering the filling.
  10. Cut slits in the pastry to allow steam to escape.
  11. Bake for 30-35 minutes, or until the pastry is golden brown.
  12. Let the pot pie rest for 10 minutes before serving.
