Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

Add mushrooms and green beans to the skillet, and cook for 5 minutes.

Sprinkle flour over the vegetables and stir to coat.

Gradually add vegetable broth and milk, stirring constantly until thickened.

Remove from heat and let it cool for a few minutes.

In a separate bowl, beat eggs and stir in cheddar cheese, salt, and black pepper.

Add the egg mixture to the skillet and mix well.

Roll out the pie crust and place it in a pie dish.

Pour the vegetable mixture into the pie crust.

Bake for 30-35 minutes, or until the crust is golden brown.

Let it rest for 10 minutes before serving.
