Carrot cake became popular in the United States during World War II when sugar was rationed, and carrots were used as a substitute for sweeteners.

Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

In a large bowl, combine the grated carrots, flour, sugar, vegetable oil, eggs, baking powder, baking soda, cinnamon, salt, and vanilla extract. Mix well.

Fold in the chopped walnuts.

Pour the batter into the prepared baking pan and smooth the top.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Spread the cream cheese frosting over the cooled carrot cake.
