  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
  5. In a small bowl, dissolve the instant coffee granules in hot water. Add the coffee mixture to the batter and mix until smooth.
  6. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. In a separate bowl, prepare the coffee icing by creaming together the powdered sugar, butter, milk, and vanilla extract until smooth.
  9. Once the cakes have cooled, spread a layer of coffee icing on top of one cake layer. Place the second cake layer on top and frost the entire cake with the remaining icing.
