In a food processor, combine the flour, butter, and cheddar cheese until the mixture resembles coarse crumbs.

Gradually add the cold water and pulse until the dough comes together.

Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat the oven to 375°F (190°C).

In a large bowl, combine the sliced apples, sugar, cinnamon, lemon juice, and cornstarch. Toss until the apples are coated.

Roll out one disk of dough on a lightly floured surface to fit a 9-inch pie dish. Transfer the dough to the pie dish.

Fill the pie dish with the apple mixture.

Roll out the second disk of dough and place it on top of the apple filling. Trim and crimp the edges.

Brush the top crust with beaten egg.

Cut several slits on the top crust to allow steam to escape.
