Preheat the oven to 400°F (200°C).

In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent.

Add the chicken thighs to the pot and cook until browned on all sides.

Remove the cooked chicken from the pot and set aside. In the same pot, add the carrots and potatoes. Cook for 5 minutes.

Add the flour to the pot and stir until well combined. Gradually add the chicken broth and milk, stirring constantly.

Bring the mixture to a simmer and cook until thickened. Season with salt and pepper.

Remove the pot from heat and stir in the peas.

Roll out one sheet of puff pastry and line a baking dish with it.

Pour the chicken mixture into the lined baking dish.

Roll out the second sheet of puff pastry and place it on top of the chicken mixture. Press the edges to seal.

Beat the egg in a small bowl and brush the top of the pastry with it.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crispy.

Allow the pot pie to rest for 10 minutes before serving.
