Graham crackers were originally created as a health food by Sylvester Graham, a 19th-century Presbyterian minister who believed in the importance of a vegetarian diet.

Preheat the oven to 350°F (175°C).

In a large bowl, mix together almond flour, coconut flour, tapioca flour, ground flaxseed, cinnamon, baking powder, and salt.

Add coconut oil, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined and a dough forms.

Place the dough between two sheets of parchment paper and roll it out to about 1/8 inch thickness.

Remove the top parchment paper and transfer the rolled dough onto a baking sheet.

Using a sharp knife or a pizza cutter, cut the dough into desired cracker shapes.

Bake in the preheated oven for 12-15 minutes, or until golden brown around the edges.

Remove from the oven and let the crackers cool on the baking sheet for 10 minutes.

Transfer the crackers to a wire rack and let them cool completely.

Store in an airtight container for up to 1 week.
