  3. Add sliced mushrooms, diced carrots, and diced potatoes. Cook until vegetables are tender.
  4. In a small bowl, whisk together vegetable broth, soy sauce, all-purpose flour, thyme, rosemary, salt, and black pepper.
  5. Add the seitan and frozen peas to the skillet. Pour the broth mixture over the ingredients and stir well.
  6. Cook for a few minutes until the mixture thickens.
  7. Transfer the filling to a pie dish lined with a pie crust.
  8. Cover the filling with another sheet of pie crust and seal the edges.
  9. Cut a few slits on the top crust to allow steam to escape.
  10. Bake in the preheated oven for 40-45 minutes, or until the crust is golden brown.
